APPLE, BACON & ONION FRITTATA

INGREDIENTS

1 large apple, diced
 
1/2 large onion, diced
 
2 bags bacon bits (or 2 cups of homemade bacon)
 
1 Tbsp BBF Naturally Refined Avocado Oil
 
5 eggs
 
1/3 Cup egg whites
 
1 Tbsp BBF Organic Coconut Flour
 
Dash salt and pepper

DIRECTIONS

1. Preheat oven to 350°F

2. Heat avocado oil in a medium oven-safe skillet. Add in onion and cook for 2 minutes. Add in apple and bacon bits and cook for an additional 2 minutes.

3. In a bowl, combine eggs, egg whites, coconut flour, salt & pepper. Mix well.

4. Add egg mixture to sauteed onion, apple and bacon bits.

5. Place skillet in oven and bake until golden. About 35 minutes.

Eat warm or cold.
