1/4 cup almond flour
2 cups unsweetened shredded coconut
1 tbsp vanilla extract
1/4 tsp salt
1 tbsp melted butter
4 egg whites
1/4 cup So Nourished granular erythritol
Preheat the oven to 400 degrees F and like a cookie tray with parchment paper or a silicone baking mat.
Mix together the almond flour, coconut, butter, salt and vanilla extract.
In a separate bowl, whip the egg whites with the granular erythritol until stiff peaks form.
Carefully fold the whipped egg whites into the coconut mix until fully combined.
Scoop the batter onto the prepared cookie tray. You should get about 12 cookies, each 1 ½-2 inches in diameter.
Bake the cookies for 15 minutes or until the tops of the cookies begin to turn a golden brown.
Remove the tray from the oven and let the cookies cool on the tray. Enjoy!
