This keto whipped cream recipe uses heavy cream as the primary ingredient. You may see lots of low carb whipped cream recipes that have you use the fatty top of coconut milk instead of heavy cream. However, heavy cream actually has fewer carbs than coconut milk and about just as much fat. Heavy cream also whips much better than coconut milk and the whipped cream will hold its shape for longer. Seems like heavy cream is the natural choice!
Ingredients
2 cups heavy cream (cold)
1/4 cup So Nourished powdered erythritol
1 tsp vanilla extract
1/8 tsp salt
Instructions
Place the heavy cream in the bowl of a stand mixer fitted with a whisk attachment. Whip until the cream begins to thicken (about 2-3 minutes on high speed).
Add the powdered erythritol, vanilla and salt to the bowl and then turn the mixer on high speed and whip until stiff peaks form. This means when you lift the whisk out of the cream, it should hold its shape and look more like a solid than a liquid
Use the whipped cream immediately to top any keto dessert, serve with a bowl of keto berries or as a garnish to any keto drink!
