Keto White Chocolate Coconut Bark

White chocolate and coconut never tasted so good together! Coconut is the perfect complement to white chocolate both in taste and in color- the combo makes for a pure, pretty white treat! You may have had dark chocolate and coconut before but white chocolate and coconut are the new thing.

Our keto white chocolate coconut bark also makes an excellent gift! Not sure what to take to a housewarming party or hesitant about what to give your co-worker for their birthday? This recipe is such an instant hit that you can rest assured that virtually anybody will love it. Wrap it up in little cellophane bags, put a pretty bow on top and you have a perfect gift! Everyone loves a gift that you can eat too- they are the best!

Instructions

  1. Whisk together the unsweetened coconut milk, erythritol, and xanthan gum in a small saucepan over medium heat.

  2. Heat until the erythritol is dissolved and simmer until reduced by half – about 1 hour.

  3. Whisk in the vanilla protein powder then set aside to cool for 15 minutes.

  4. Stir the melted cocoa butter into the condensed mixture then stir in the shredded coconut.

  5. Spread the mixture on a parchment-lined baking sheet then sprinkle with toasted coconut flakes.

  6. Freeze until firm then cut into pieces to serve.
