White chocolate and coconut never tasted so good together! Coconut is the perfect complement to white chocolate both in taste and in color- the combo makes for a pure, pretty white treat! You may have had dark chocolate and coconut before but white chocolate and coconut are the new thing.

Ingredients
3 cups unsweetened coconut milk beverage
5 tablespoons So Nourished powdered erythritol
Pinch xanthan gum
1/3 cup vanilla whey protein powder (40g)
1 tablespoon cocoa butter (melted)
1/2 cup shredded unsweetened coconut
1/4 cup toasted coconut flakes
Instructions
Whisk together the unsweetened coconut milk, erythritol, and xanthan gum in a small saucepan over medium heat.
Heat until the erythritol is dissolved and simmer until reduced by half – about 1 hour.
Whisk in the vanilla protein powder then set aside to cool for 15 minutes.
Stir the melted cocoa butter into the condensed mixture then stir in the shredded coconut.
Spread the mixture on a parchment-lined baking sheet then sprinkle with toasted coconut flakes.
Freeze until firm then cut into pieces to serve.
