Recipe By Truvia
1 lb fresh ginger, washed, roughly peeled and chopped into 1-inch chunks
2 cups water
1 cup freshly squeezed lime juice
1⁄4 cup of zero-calorie Truvia Natural Sweetener Spoonable***
2 oz. Truvia Natural Sweetener ginger concentrate (see directions below)
8 oz. club soda
1 tsp imitation rum extract
1 Tbsp mint, washed and diced
In a blender or food processor, liquefy the ginger and 1 cup of water for 3 minutes.
Using a small strain drain the juice into a bowl.
Transfer the ginger pulp back to the blender or food processor, add another ½ cup of water and liquefy again.
Strain again, adding the liquid to the first batch.
Again, transfer the pulp along with another ½ cup water and liquefy again.
Strain again, and add to the collected liquid.
Press the solids with the back of a big spoon to squeeze out as much of the juice as you can.
Discard the mashed solids and rinse out your blender/food processor.
Pour the liquid into the blender/food processor.
Pour in the lime juice and Truvia Natural Sweetener. Blend for 30 seconds. Store leftovers refrigerator in a sealed container.
Mash mint into the bottom of a glass with a spoon.
Add 2 oz. of Truvia Natural Sweetener Ginger Concentrate into a glass along with about 8 ounces of club soda.
Add the rum extract and ice.
Store leftovers refrigerator in a sealed container.
