Recipe Found at So Nourished Published Jul 27, 2021 by Amanda Bochain Ingredients 2 pounds boneless, skinless chicken breast 2 tbsp dried parsley 1 tbsp dried dill 1 tbsp dried chives 1 tsp dried basil 2 tsp garlic powder 1 tsp onion powder 1 tsp ground black pepper 1 pound cream cheese, softened 2 cups broccoli florets 1 cup shredded cheddar cheese 1 cup cooked, crumbled bacon 2 tbsp fresh chopped green onions Instructions In a large bowl, stir together all the spices and softened cream cheese. Mix well. Place the chicken breast in the bottom of a slow cooker and then spread the cream cheese mix over the chicken. Cover and cook the chicken for 4 hours on high heat. After 3 hours of cooking, stir in the broccoli florets. Cover and continue to cook for the remaining hour. Use two forks to shred the chicken, mixing it into the cream cheese sauce as you shred. Add the shredded cheddar cheese, crumbled bacon and green onions and stir to melt the cheese. Scoop and serve while hot.

- Coconut Flour Pie Crust
Recipe Found at So Nourished by Amanda Bochain Coconut flour baked goods tend to be gummy and chewy. It also has a tendency to crumble when not made correctly. This recipe has solved both of these problems in this recipe. To help bind the ingredients together in a smooth, easy to work with dough, we added eggs to the dough. Eggs are not always used in pie crust but in the keto case, you need something to hold the crust together. Eggs are the perfect solution! As the crust bakes, the eggs will coagulate and seal the crust, preventing it from crumbling apart when you cut a slice of pie later on. Crumbly pie crust? No way! Ingredients 3/4 cup coconut flour 2 eggs 1/3 cup melted coconut oil 1/4 tsp salt 2 Tbsp So Nourished granular erythritol 1/4 tsp vanilla extract 1/2 tsp lemon zest (optional) 1 tsp ground cinnamon (optional) Instructions Preheat your oven to 350 degrees F. Grease your nine-inch pie pan with extra coconut oil or butter and set aside. In a large bowl or in the bowl of a stand mixer fitted with a paddle attachment, blend together the coconut flour, eggs, melted coconut oil, salt, erythritol and vanilla. You can also add the cinnamon and lemon zest if you are using either. Blend the ingredients until the dough becomes crumbly. It may look wet at first but will dry as it blends and the flour absorbs some of the moisture. Use your hands to knead the dough into a ball. Place the ball of dough on a piece of parchment paper and flatten it with your hands. Place another piece of parchment paper on top of the dough and then use a rolling pin to roll the dough into a 12-inch circle, rolling it between the parchment. Move the dough (still between the paper) to a sheet tray and place in the fridge for about 30 minutes. Remove the dough from the fridge and take off the top piece of parchment paper. Pick up the dough and bottom paper and then flip the dough upside down into the prepared pie pan. Peel off the last piece of parchment paper. Gently press the dough into the pie pan then cut off the excess around the top or use your fingers to crimp the top edge. If the dough cracks as you press it into the pan that is okay. Just press the dough back together with your fingers. Par bake the dough in the oven for 15 minutes then use the pie crust for your favorite keto pies!

Recipe Found at So Nourished Published Apr 13, 2021 by Amanda Bochain Ingredients 1/4 cup almond flour 2 cups unsweetened shredded coconut 1 tbsp vanilla extract 1/4 tsp salt 1 tbsp melted butter 4 egg whites 1/4 cup So Nourished granular erythritol Instructions Preheat the oven to 400 degrees F and like a cookie tray with parchment paper or a silicone baking mat. Mix together the almond flour, coconut, butter, salt and vanilla extract. In a separate bowl, whip the egg whites with the granular erythritol until stiff peaks form. Carefully fold the whipped egg whites into the coconut mix until fully combined. Scoop the batter onto the prepared cookie tray. You should get about 12 cookies, each 1 ½-2 inches in diameter. Bake the cookies for 15 minutes or until the tops of the cookies begin to turn a golden brown. Remove the tray from the oven and let the cookies cool on the tray. Enjoy!

Recipe Found at So Nourished by Amanda Bochain Ingredients Carrot Cake 4 eggs 1/3 cup olive oil (We Prefer Frankies Olive Oil) 1 Tbsp vanilla extract 1 cup So Nourished granular erythritol 2 cups almond flour 1/4 cup coconut flour 2 tsp baking soda 1/2 tsp baking powder 1 tsp ground nutmeg 1 tbsp ground ceylon cinnamon 1/4 tsp salt 1/2 cup melted butter 1/2 cup chopped walnuts 2 cups shredded carrots Frosting 1/2-pound cream cheese 1/2 cup So Nourished powdered erythritol 1/4 cup butter, softened 1 tsp vanilla extract 1/3 cup heavy cream Instructions Preheat your oven to 350 degrees F. Lightly grease two 6-inch round cake pans and set aside. In a large mixing bowl, whisk together the eggs, olive oil and vanilla. Add the almond flour, coconut flour, baking soda, baking powder, nutmeg, cinnamon and salt to the bowl and whisk to make a smooth batter. Fold in the melted butter, walnuts and shredded carrots. Pour the batter into the two prepared cake pans then bake for 30 minutes. Remove the pans from the oven and let the cakes cool in the pans. Make the cream cheese frosting. Beat the cream cheese, butter and powdered erythritol together until light and fluffy. Pour in the vanilla and heavy cream and mix until smooth. Frost the cooled cakes with the cream cheese frosting, spreading a layer of frosting between the two cakes as well as on the top and sides (make it pretty!) then enjoy! - Fall Salad with Acorn Squash and Bacon
Recipe By Primal Kitchen This seven-ingredient (not counting salt and pepper) fall salad recipe combines autumn vegetables with a tangy, herby Italian dressing, and a combination of soft, crisp, crunchy, and chewy textures. Ingredients 1 tablespoon Primal Kitchen Avocado Oil 1 acorn squash 1/4 teaspoon salt 1/4 teaspoon black pepper 6 strips sugar-free, nitrate-free bacon 2 tablespoons shallot, minced 2 cups Brussels sprouts, shaved 8 cups baby spinach, washed and dried 1/2 cup Primal Kitchen Italian Vinaigrette & Marinade Instructions Preheat the oven to 375ºF. Insert a sharp chef's knife on one side of the stem of the acorn squash. Cut straight through the squash (don't try to cut through the stem) until the knife doesn't meet any more resistance and you've cut through to the middle of the squash. Continue cutting around the side of the squash around the other side until you're at the other side of the stem. Put the knife down, and use your hands to pry the squash apart. Scoop the seeds and stringy insides out of the middle of the squash on each side, then place on a baking sheet. Drizzle half of the avocado oil on each side, and sprinkle with salt and pepper. Roast the squash for 50 to 60 minutes, or until the halves are roasted around the edges and you can poke a fork easily through the flesh of the squash. Set the squash aside to cool and turn the oven off. Cook the bacon in a cast iron skillet over medium heat until it's crispy. Drain bacon on paper towels and allow to cool. When bacon has cooled, cut or crumble into bits. Place the shallots in the bacon grease for 2 minutes to soften (stir frequently) and then add in the shaved Brussels sprouts. Cook for about 3-4 minutes. Remove from heat.
