Keto Marinara Sauce

2 tablespoons of Olive Oil (Frankies is our Favorite)
1 clove of Garlic, crushed
2 teaspoons of Onion Flakes
1 Cup Vegetable broth
1/2 Diced Mushrooms
2 teaspoons of finely chopped Fresh Thyme
2 teaspoons of finely chopped Fresh Oregano
In a food processor puree 4-6 tomatoes
2 teaspoons of Erythritol
1 teaspoon of Pepper
1 teaspoon of Salt
1 tablespoon of Red Wine Vinegar
2 tablespoons of Fresh Parsley, finely chopped
Instructions
Using a medium saucepan, place the oil, garlic, onion flakes, thyme and oregano. Saute over medium heat for approximately 3 minutes.
Add the tomato puree and stir until blended
Add the erythritol, pepper, salt and red wine vinegar until it begins to simmer
Turn off the heat and stir in the parsley
Let the sauce Cool before storing
Store in fridge in an airtight jar
