Incredibly Easy Low Carb Oatmeal Cookies
3/4 cup sliced almonds
1 cup almond flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/2 cup So Nourished granular erythritol
1/2 cup butter
1 tsp vanilla extract
1/2 cup Lily's Chocolate Chips
Preheat your oven to 325 degrees F and line a baking sheet pan with parchment paper.
Add the coconut and almonds to a large bowl and use your hands to mix them together, breaking the almond slices as you mix. You want the mix to look similar to rolled oats.
In a separate bowl, beat the butter and erythritol until light and fluffy.
Add the egg and vanilla to the butter mix and stir to combine.
Add the dry ingredient mix and stir to form a nice sticky dough.
Fold in the keto friendly chocolate chips.
Scoop the cookie dough into 2 tablespoon sized balls and place on the prepared sheet tray. Flatten the balls with your hand so they are about ½ inch thick.
Bake the cookies for about 18-20 minutes until the edges are golden brown. Let cool on the tray before enjoying!
