Gluten Free - Vegan


¼ cup BBF avocado oil ¾ cup sugar (or sugar free granular substitute) 2 teaspoons vanilla extract ¾ cup oat flour ¼ cup brown rice flour ¼ cup BBF Cacao powder ¾ teaspoon baking soda 1 teaspoon salt ¼ cup BBF Fruit and Fiber Blend 2 cups shredded zucchini 1 cup chocolate chips if desired or (sugar Free Chocolate chips)


Preheat oven to 350 degrees and prepare an 8x8 baking pan spray with pan spray or line with parchment (allow parchment paper to go up the sides for easy removal) In a large bowl combine, oil, sugar and vanilla until fully incorporated. Add flours, fruit and fiber blend, cacao, baking soda and salt. Mix until combined. Batter will be very dry. Fold in zucchini by hand. Allow batter to rest for 5 minutes. Stir in chocolate chips. Batter should appear more wet if not let sit for 5 more minutes, stir again. Spread brownie mixture into the pan and bake for 25-35 minutes. Brownies are done when an inserted toothpick comes out clean
