Tiger Nut Flour Pancakes

These fluffy pancakes are made with tiger nut flour (a gluten-free flour made from small root vegetables called tiger nuts).  They have a mild sweet flavor and go perfectly with fruit, butter, and keto friendly maple syrup.



  1. In a mixing bowl, combine the eggs, coconut oil, almond milk, and coconut sugar; mix well.

  2. Add tiger nut flour, coconut flour, baking soda, and salt; mix well.

  3. Cook on a hot greased skillet in 2 tablespoon portions until golden brown on each side.

  4. Serve and enjoy. with Keto friendly Maple Syrup
