These fluffy pancakes are made with tiger nut flour (a gluten-free flour made from small root vegetables called tiger nuts). They have a mild sweet flavor and go perfectly with fruit, butter, and keto friendly maple syrup.
Ingredients
2 eggs
1/4 cup Coconut Oil, melted
1/3 cup almond milk
1 tablespoon Anthony's Coconut Sugar or (Erythritol for Keto Diet)
1/2 cup Anthony's Tiger Nut Flour
2 tablespoons Anthony's Coconut Flour
1/3 teaspoon baking soda
1/4 teaspoon salt
Instructions
In a mixing bowl, combine the eggs, coconut oil, almond milk, and coconut sugar; mix well.
Add tiger nut flour, coconut flour, baking soda, and salt; mix well.
Cook on a hot greased skillet in 2 tablespoon portions until golden brown on each side.
Serve and enjoy. with Keto friendly Maple Syrup
