Pistachio Chocolate Protein Truffles

Protein Infused Deliciousness made with Carrington Farms Organic Coconut Oil
Ingredients:
1 cup shelled pistachios, divided
8 pitted Medjool dates
1 cup raw walnuts
2 scoops of Garden of Life Whey Protein Powder Chocolate Cacao
½ tsp pure vanilla extract
¼ tsp kosher salt
½ cup dark chocolate
Directions:
Preheat the oven to 350°F and toast pistachios on a baking sheet for about 5 minutes.
Rehydrate dry dates in boiling water if needed. In a food processor, blend walnuts and 3/4 cup of pistachios into a meal.
Set aside, then pulse the remaining pistachios into coarse pieces for topping. Process dates into a sticky paste, adding cocoa powder, vanilla, salt, and the ground nut mixture. Scoop and roll the mixture into balls and freeze for 10-15 minutes.
Melt chocolate and Carrington Farms Organic Coconut Cooking Oil in a small pan, then dip truffles into the chocolate and top with crushed pistachios.
