Keto Lemon Matcha Balls

Make these for an ample snack to chomp on throughout the day for cravings to help you then carry on with the rest of the day.
1/2 cup tiger nut flour
4 Tbsp. coconut butter
2 Tbsp. sunflower butter
1/4 tsp. lemon extract
Zest of 1 lemon
Sift the tiger nut flour with 2 scoops of the Matcha Collagen Keto Latte in a large bowl, and set aside.
In a small sauce pan on low heat, melt the coconut butter. Once melted, pour coconut butter into the dry sifted ingredients. Add the sunflower butter and lemon extract. Mix well to create a dough.
Pinch off about a tablespoon full of dough into your hands and roll the dough between your palms to create a ball. You should get 8 balls out of the dough.
Roll the balls in the remaining Matcha Collagen Keto Latte mix, and place in the refrigerator to cool for at least 30 minutes.
Sprinkle with lemon zest once chilled.
