  • KETO ALMOND CRUSTED CHICKEN RECIPE

    Posted by Team Legendary on October 05, 2016 Via Candy Beauchamp Modified By Healthy Life Selections 10/21/20 Ingredients: 1 pound of boneless skinless chicken breast 4 oz of Buffalo Blue Wing Seasoned Almonds 1 teaspoon of garlic powder 1 teaspoon of Italian seasoning 2 egg whites ¼ cup of water ½ cup tiger nut flour Cooking spray Food processor Directions Preheat the oven to 400oF. Use the cooking spray to line a large baking sheet and set aside. Add Buffalo Blue Wing Almonds to the food process and continually plus until finely ground. In a small bowl, combine ground almonds and garlic powder. In a separate bowl, whisk water and egg whites until completely blended. Use a third bowl for tiger nut flour. Cut chicken breasts into halves or strips Set up an assembly line for ingredients starting with the flour. Dip chicken breast into the tiger nut flour, covering it completely. Lightly shake to remove excess flour. Dip the same piece of chicken into the egg mixture, coating completely. Remove from egg mixture and coat with seasoned almonds and place on the baking sheet. Cook for 10-20 minutes depending on the thickness of the chicken. Flip and cook for additional 10-20 minutes. Optional - Broil chicken for 1 to 2 minutes on each side for a crispier shell. Optional - flash fry in coconut oil for a crispier shell. Not combined with step #12.     INGREDIENTS: 1 cup Lakanto Pancake & Baking Mix ½ cup Lakanto Baking Sweetener ½ cup milk (non-dairy or water works) 2 Tbsp coconut oil, melted 2 eggs ½ tsp almond extract (can use vanilla extract or 2 tsp. lemon zest for a lemon donut) INSTRUCTIONS: Preheat oven to 325°F.  Spray donut pan with cooking spray and set aside. Combine the baking mix and baking sweetener in a medium bowl. Whisk in the milk, melted coconut oil, eggs, and extract. Stir until evenly mixed. Fill each donut mold ¾ full.  Use a piping bag if it makes filling the pan easier. Bake 8-10 minutes. Remove from oven and allow donuts to cool slightly before removing from pan.  Frost with desired glaze. VANILLA GLAZE INGREDIENTS: 1 cup Lakanto Powdered Monkfruit Sweetener 2 TBSP Vanilla Flavored Syrup 1 TBSP Almond Milk VANILLA GLAZE INSTRUCTIONS: Mix all ingredients together in a small bowl by spoon or whisk. Ready! Dipped cooled donuts in glaze. STRAWBERRY GLAZE INGREDIENTS: 1/4 frozen strawberries, thawed (pre sliced) 1 cup Lakanto Powdered Monkfruit Sweetener 1 TBSP lemon juice STRAWBERRY GLAZE INSTRUCTIONS: Mix all ingredients together in a small bowl by spoon or whisk. Cut strips of parchment paper then lay across pan (eases un molding). In a microwave safe bowl, melt keto chocolate bar + 1 tbsp coconut oil in 30 second increments until melted (save some for drizzle at the end). Pour first layer (melted keto chocolate and coconut oil) Pour second layer (1 cup pretzel sticks) Refrigerate about 5 minutes Pour third layer (160g Legendary Foods Pecan Pie Nut Butter + crushed pecans + 1/2 cup keto friendly pretzels). Drizzle last of chocolate and coconut oil. Freeze for 20-30 minutes Pop out by pulling parchment paper. Cut into bars Enjoy!
